I have some prairie chickens from my recent hunt in NE and looking for a good recipe or two. |

Look up any steak fajita recipe and substitute the Prairie Chicken breasts cut into strips. My personal favorite way to have them.

Young or old birds?
If young, soak them in salt water at least over night.
Then Marinate in teriyaki, Worcestershire sauce, and Lawrys's teriyaki marinade, a bit of lemon juice and a bit of pineapple juice if you like,
Garlic powder, sharp paprika, black pepper, lemon pepper, salt.
Chuck them out on the grill or smoker, baste them a little with some olive oil or butter and same ingredients as in marinade.
If old, you can bone them meat out, and cure it. Soak in salt, sugar bit of tenderquick, over night, dump out water, repeat, let soak for two days.
Then you can do whatever you like with them. I have grilled them, then put them in crock pot with some habanero pineapple bbq sauce and ate it like pulled pork sandwiches. I do this same thing with duck when I get it. |

I've never hunted prairie chickens, but here is what I do for sage grouse: BBQ the clean pieces on a charcoal grill, basting with a mixture of horseradish mustard, sour cream, and a little milk , turning frequently until done. |

Sharptail on toast is my must-make dish and I'll see if I can find the image of it to post. On sourdough bread with a chopped mushroom sauce it's distinctive and hearty. |

It seems the you were in a better spot for chickens, I found out yesterday that the birds up at Valentine and Thedford migrate darn near to North Platte for the winter, where they can get corn.
Anyway, a terribly simple recipe ,but a good one, is to merely season the breasts with hickory salt then wrap a lice of bacon around each fillet then grill over a fire, bonus points for hardwood. |

These definitely were migrating birds from the Sand Hills. The dogs got close enough to point them, in an area that earlier in the season had no chickens. I doubt these birds had ever been shot over. Very unusual for this time of year.
Sounds like another good recipe! Thanks Wyo.....ps the boots are wonderful.

BTW, I double the sauce amounts as it's a bit short once cooked down. |

I generally give em to the neighbors and go out to eat. You will notice that almost ALL these recipes use a LOT of strong bastes and marinades to influence the cooked flavor....We have a LOT of them this year,but I don't kill them anymore ... |
