My wife isn't a big wild game of any kind fan. On the days when I want phez or whatever we end up cooking our own meals. A couple weeks ago she went to CT to welcome a new grandchild and help her daughter out for a short time.
So that leaves me to my own devices. I like to cook so......
It has been a steady diet of pheasant, huns and elk. Sharpies ( I don't have too many ) probably for Saturday night. The elk was given to me by a guy I helped out recently.
I could stay on this diet 100% of the time, especially when fishing season starts and I can begin catching walleye.
Obviously that isn't really possible because the freezer will be empty of this wonderful meat, but this has been great.
I'd like to hear what you folks enjoy for dinner when it comes to wild game. |

we used to have a big wild game dinner at Rochester Brooks club - by far the biggest club in NY !! They had everything . I got invited I think cause they knew I'd gotten a moose that fall .... 20#'s of Swedish mooseballs , Easy recipe using Campbells Onion and Mushroom soup mixed as sauce/gravy . I put my jacket in the cloak room , chatted with one of the guys for a couple minutes and when I emerged , greeted with an empty pan !! same deal repeated at work soon after . Learned to keep my lunch segregated in my locker when doing that !! (elk should work the same way ) |

Woodcock...for the association the appetizers hold for me when cooked over a motel range flame.
Squirrel...for the memory of bouncing limbs, cleaning by headlight in old man Burson's farmyard and then parboiled and pan fried goodness, with a side of mursh.
Bluegill....one need not explain that 'un. |

More seriously, there are a lot of good choices, but I think quail are my favorite. |

Dave, here is my Ruffed grouse recipe and it is so simple I'm almost embarrassed, but it may be the best you ever ingest:
1) Cut ruffed grouse breast into "finger strips".
2) Season in a mixture of hickory salt and... of all things... chicken ramen noodle seasoning. Mix 1/3 hickory with 2/3 ramen packet seasoning. I mix up a whole batch when I make it.
3)Roll seasoned strips in crushed Club cracker crumbs.
4) Fry medium rare to medium (quickly) in peanut oil.
That's it. No need to further complicate things, it's that good. |

I'm lucky in that my wife enjoys wild game and also cooking it. I shoot alot of grouse and pheasant each year, and generally at least one deer. We smoke a lot of the birds and they dissapear quickly when I bring them out. She likes venison also. I didnt get married until I was 40, and never bought any meat other than lunch meat and bacon.
My son turned 33 this week and and has returned to his roots, wanting to hunt and fish with me. I gave him a 20 OU that I never use, a Ruger 10-22, and my Ruger Mk II 22 pistol, along with a new ultralight rod and reel. For his birthday dinner, he wanted bluegill, so we had a big fish fry. |
