For the pot luck dinner at my cousins Christmas Eve I decided to make a batch of Green Chili.
Anaheim chilies, onion, jalapenos, cilantro, tomatillas, garlic and one poblano chili. Roast the chilies for 20min at 500* turning once.
Peeling the skin off the chilies is not fun
So---, being sort of lazy, I remove the skin with a rolling pin
A little messy but works
Since wimmins an chillins will be present I removed the seeds from the jalapenos, supposed to be less firery that way
Chop everything up and mash the garlic to remove the skin
Teaspoon of cumin
Smells so goooood!
In a bowl with corn tortillas or in a flour tortilla burrito with a little rice and I'm a happy camper

In the days of yesteryear when I lived in Oracle, I often had green chilis in various dishes like Encheladas and Burittos at a resturant there I think was called Nico's. My recollection is that the seeds in the green chili was where the heat was so if you left those out the flavor was all there but the fire was just a notion. YUM |

Sounds very tasty... I love a good green chili. I'll have to remember that rolling pin method the next time I roast pablano peppers.
I'm actually making a batch of tomales for my family get together on Christmas Eve. Ham hocks, pinto beans, chipotle in adobo sauce, garlic, for the filling. My whole family loves mexican food! |
