Don't want to cook the gent but would like to follow up on a snipe thread that ran a while ago. You mentioned a pate recipe that you might be able to reprint for us. Any luck?

Gents, the pate' recipe is from the Spring 2008 issue of Upland Almanac, which happens to be my favorite hunting/shooting publication. The recipe works well for woodcock or snipe, although the title of the dish is "woodcock-olive" pate'...
I'd put the recipe here for you, but the material is copyrighted and the publisher, John Gosselin, is a fine fellow and a friend. So...I don't want to republish the item without a clearance. I'll contact John and see if he will OK us to put it here and if so, I'll be happy to share it. TASTY stuff on fresh toastpoints, fellas! |

You know, MCS, great minds run together! Your inquiry is most timely as I just got info from Upland Almanac on this item and was about to post on the previous thread you mentioned. But...here is a new one...so I'll post the update here!
The recipe from the Spring '08 issue was reprinted with permission from another published work. So no rights to share outside the actual magazine issue were conferred, making further republishing by electronic BB somewhat problemmatic. If you want that specific recipe, I'd suggest ordering a copy of the back issue from www.uplandalmanac.com
However...there is good news on the recipe front! The CURRENT Spring 2010 issue has a "Gamebird Pate" recipe that can be modified and used to make a nice pate from all kinds of gamebirds! Good stuff, gents! So I'd hit your local newsstand or bookstore and get the current issue, make up a batch of pate, get out some wine and appropriate crackers or toastpoints and ENJOY!! |

Sounds like you were getting hungry, too. I found that magazine at the local bookstore, got it thanks. You recall if the prior recipe called for 1/2 pound of cream cheese? Wasn't expecting that. I might order a back issue to find out. Plenty good reading now. Cheers. |

Nope, it did not call for as much cream cheese...which surprised me a bit as it is a fairly common ingredient in pate recipes and in recipes generally for other "spread on bread" goodies. However, it did call for a pretty good amount of "patty style" crumble sausage to fill out the mixture and I was not quite expecting that.
But...what the heck, it's ALL GOOD! What fun to try new recipes out...especially when you can invite your friends down for some fun, wine, snacks, shooting lies, etc!! |
